Tub of Ducks

Rather than my usual phone call to a bakery, I stepped up to the plate … er, oven … and whipped up this cake for a shower I co-hosted this week. It turned out to be incredibly easy and the ladies at the shower loved it.

Credit for the recipe goes to Patricia at Cakeopolis. Thank goodness for Google and fellow bloggers.

Here’s my modification of her recipe:

1 box chocolate cake mix
1 box white chocolate cake mix
1 can chocolate frosting
1 container CoolWhip
Blue food coloring
2 tins pirouette cookies
2 or 3 small rubber duckies
2-foot ribbon

Prepare cake mixes as directed, using two 9-inch round pans for each. Cool cakes. Eat one of the white cakes before anyone in your house knows you’re baking.

Level tops of remaining three cakes using a bread knife. Place one chocolate layer on serving platter and frost top. Place white layer upside down on top of the first cake. Frost its new top (formerly its bottom.) Place remaining chocolate layer on top. Frost the sides of all three layers.

Stir a few drops of blue food coloring into the tub of CoolWhip. Dollop on top of cake and spread using gentle swirls to resemble water.

Gently push vertical pirouette cookies onto the sides of the cake, side-by-side around the cake. Gently tie and bow ribbon around the cake. Top with duckies.

Note: To cut down on the sweetness of the cake, next time I would try large pretzel sticks around the sides in place of the pirouette cookies.
